The ergonomic design maximises efficiency and comfort in use. The hand-held knife sharpener can be used right or left-handed, is weighted for stability and safety, and has a non-slip base. The replaceable ceramic sharpening wheel is housed within an angled clear plastic guard, ensuring that the knives are properly aligned with the sharpening wheel, which is positioned at the optimal sharpening angle for the Signature and Professional kitchen knives’ Japanese-style 15° blade edge.

Regular use will help to keep your kitchen knives’ blade edges sharp. We recommend changing the sharpening wheel every 12-24 months, depending on the frequency of use, to keep your knife’s cutting edge at a high standard.

This hand-held knife sharpener is specifically designed for use with the Signature and Professional ranges of kitchen knives, but it may also be used to maintain and sharpen other plain-edge kitchen knives. This product should not be used to sharpen serrated edge blades.

The sharpener should be cleaned by hand regularly, raising the clear guard to wipe the inside with a damp microfibre towel and then completely drying before returning the guard. To prevent sharpener dust from accumulating, the ceramic wheel can be removed and washed in the dishwasher.
